In Astigarraga's culture txotx is a custom that is carried out from the first "kupela" opening, that is usually on January 20th, until  half-full of May.

The txotx started as a taste among the cider producer and wholesalers, restaurants, societies,.etc, that went to the cider house to taste different kupelas to choose the cider that they considered was in the best condition for its later purchase.

Until nowadays, that it has become a gastronomical. mythical and popular event of the Basque customs.
